One of the things I love most about this recipe is how well it meal preps. You can make a big batch on Sunday and have nutritious, satisfying meals ready all week long. The flavours actually improve as they sit, and each component stores beautifully:

Spiced Greek Bowls with Marinated Cucumber Salad

prep time: 10 min | cook time: 30 min | serves: 4-5

Ingredients:

For the Spiced Meat

  • 2 lb ground beef (but you can use any ground meat in this recipe)

  • 1 tsp ground cumin

  • 1 tsp coriander

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 tsp smoked paprika

  • 1/2 ground pepper

For the Marinated Cucumber Salad

  • 6oz crumbled feta

  • 1 English cucumber, cut into 1/2 moons

  • 2 Roma tomatoes, cut into medium dice

  • 2 tbsp finely chopped dill

  • 3 tbsp olive oil

  • zest and juice of 1/2 a lemon

  • 1 tsp salt

  • 1/2 tsp pepper

For the Bone Broth Brown Rice

  • 1 cup brown rice

  • replace water with equal parts bone broth (store bought or homemade)

Directions:

  1. Begin by making the Marinated Cucumber Salad: In a bowl combine the feta, cucumber, tomatoes, dill, lemon zest, lemon juice, olive oil, S&P and combine well. Chill and set aside until ready to serve.

  2. Combine the coriander, cumin, oregano, garlic powder, smoked paprika, S&P in a small bowl and set aside.

  3. Cook the rice according to the package directions, replacing the water for bone broth. This step can be done ahead of time.

  4. Cook the meat: brown the meat in a large skillet, breaking it up in to crumbles, stirring occasionally, until it is browned all over. Stir in the spice mix and cook for another 2 minutes. If you are using a different type of meat, you might need to add 1/2 tbsp of olive oil to the pan before cooking.

  5. Assemble the bowls: Spoon the bone broth brown rice into the bottom of a bowl, top with the spiced meat, followed by the marinated cucumber salad and serve with a lemon wedge.

The Bone Broth Brown Rice can be prepped ahead and store in the fridge. The spiced meat can be prepped and stored in an airtight container and stored in the fridge for up to 4 days or freeze for up to 3 months. Simply reheat for a quick and nourishing dinner whenever you need it.
