(not too) Spicy Salmon Poke Bowls
I think we can all get behind a super quick and flavourful marinated salmon that is air fried to perfection in less than 10 minutes. While that’s all happening, you chop up your favourite poké toppings like fresh cucumber, sliced green onion, grated carrot and sweet mango slices. Everything is topped with a sriracha mayo that you can make yourself to control the level of heat, or just buy to make things easier (that’s what I did!)
Weeknight meals don’t have to be stressful and boring. I love these choose-your-own adventure type meals that lets everyone create their own mouthwatering masterpiece. This Spicy Salmon Poke Bowl recipe is exactly that!
And if you have a salmon adverse person in the mix? Just use the same marinade on some cubed chicken breast - it worked perfectly for my gang!

(not too) Spicy Salmon Poke Bowls
Ingredients:
1 lb raw salmon, skin removed, cut into 1” cubes
2 tsp sesame oil
2 tbsp soy sauce (or tamari)
1 tbsp rice wine vinegar
1 garlic clove, minced
1 tbsp minced ginger
For the bowls:
3 cups prepared rice
1 cup edamame beans, steamed
1 cup cucumber slices
1 mango, sliced
1 avocado, sliced
1/2 cup green onion, sliced
sesame seeds for garnish
To serve: Sriracha mayo (3 tbsp mayo + 3 tsp sriracha)
Directions:
Begin by combining the first 6 ingredients in a bowl to marinate for 10 minutes.
Next, cook your rice according to the package directions).
Preheat your air fryer to 400F (or turn your oven on to 400F).
Give the air fryer a little spray with non-stick cooking spray and air fry the salmon for 6-7 minutes, turning once halfway through. If baking the salmon, bake on a parchment lined baking sheet for 8 minutes at 400F.
Assemble the bowls! Add 3/4-1 cup of rice into each bowl. Top with the salmon, your favourite fixings and drizzle on that sriracha mayo, top with a sprinkle of sesame seeds!
