One Pan Gnocchi, Chicken Sausage and Veg Skillet

Ingredients:

  • 1 tbsp olive oil

  • 1 lb fresh gnocchi

  • 1 pint cherry tomatoes, halved

  • 1 yellow bell pepper, diced

  • 3 links chicken sausage, sliced into rounds

  • S&P

  • 1 cup fresh basil, roughly chopped

  • Optional : Balsamic glaze to drizzle

Directions:

  1. Heat a 10” skillet over medium high heat. Add the chicken sausage rounds to the pan and cook until they begin to brown.

  2. Push the sausage over to the side of the skillet and add the pint of halved cherry tomatoes, the chopped yellow pepper and cook until softened and blistered.

  3. Stir in the gnocchi and mix the vegetables and the chicken sausage together to combine.

  4. Season with S&P to taste.

  5. Remove the skillet from the heat, stir in the basil and taste. Add more S&P as needed and a drizzle with balsamic glaze, if desired.

    Enjoy!

    Notes; any cooked sausage is delish in this dish!

    Storage: Leftovers can be stored in an airtight container in the fridge for up to 4 days
