Citrus Fish Taco Bowl

Taco night, reinvented as a bowl. Same flavours everyone already loves, minus the soggy shell and the "we're out of tortillas" scramble.

This one comes together in about 30 minutes and it's built so everyone in your house can assemble their own, which is the fastest way I know to get a picky eater to eat vegetables without a negotiation.

The fish brings the protein, the black beans and cabbage bring the fiber, and the citrus marinade is doing double duty as flavor and as an anti-inflammatory boost. It's the kind of dinner that keeps you full and steady well past the table, instead of leaving you rooting through the pantry an hour later.

Citrus Fish Taco Bowl

prep time: ~20 min | cook time: ~10 min | Serves: 6

Ingredients:

  • 1.5 lbs white fish (cod, mahi mahi, or tilapia)

  • Juice of 2 oranges

  • Juice of 1 lime

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • Salt and pepper to taste

  • For the Bowl toppings:

  • 2 cups cooked rice (or cauliflower rice)

  • 1 can black beans, drained and rinsed

  • 1 cup corn

  • 2 cups shredded cabbage

  • 1 avocado, sliced

  • 2 Roma tomatoes, diced

  • Fresh cilantro

  • Lime wedges, for serving

For the Dressing:

  • 1/2 cup plain Greek yogurt

  • Juice of 1 lime

  • 1 tbsp olive oil

  • ½ tsp sriracha (or to taste)

  • Salt to taste

Directions:

  1. Combine the orange juice, lime juice, olive oil, garlic, cumin, salt, and pepper in a bowl or resealable bag. Add the fish and let it marinate for 15 to 20 minutes.

  2. Heat a skillet over medium-high heat. Cook the fish for 3 to 4 minutes per side, until it flakes easily with a fork, then break it into large pieces.

  3. Whisk together the Greek yogurt, lime juice, olive oil, and salt to make the dressing.

  4. Build the bowls: start with rice, then layer on black beans, corn, cabbage, and top with the fish.

  5. Top with avocado, a drizzle of dressing, fresh cilantro, and a lime wedge.

Notes:

  • Swap the fish for shrimp or grilled chicken if that's what's in the fridge.

  • Set everything out taco-bar style and let everyone build their own bowl. Less arguing, more eating.
