Spring Salmon with Lemon and Orzo
If you’ve got that springtime kick in your step, you need to fuel that feeling all the way through the month with this gorgeously springy, one dish salmon dinner! This dish was actually super simple to pull together, as the veggies, orzo, seasonings and salmon all got dumped into one casserole dish.
The salmon was flaky and flavourful. Fras and I devoured it.
Spring Salmon with Lemon and Orzo
Ingredients:
4 salmon fillets
3 tbsp parsley, chopped
3tbsp butter, melted
3 tbsp olive oil
S&P
1 tsp garlic powder
1 lemon, juiced
1 bundle of asparagus, chopped
1 cup peas (fresh or frozen)
1 lb orzo pasta
3 1/2 cups veggie or chicken broth
2 big handfuls spinach
1/2 cup Parmesan cheese, grated
lemon slices for garnish
Directions:
Preheat the oven to 400F.
To a large baking dish (13 x 9”), add the butter, olive oil, S&P, garlic powder, parsley and lemon juice. Give that a stir, and then dredge the salmon filets into the marinade to coat it. Then set the salmon aside.
To the same dish, add the peas, asparagus, orzo and broth.
Cover the dish and bake in the oven for 20 minutes.
After 20 minutes, remove the dish from the oven, add the parmesan and spinach, stir those through then top with the salmon filets.
Bake uncovered for another 15-20 minutes until the salmon is just cooked through.
