Halloumi Avocado Toast
Weekends for us are slowing down now that ski season is finished. And that means BRUNCH! I’ve been craving this Halloumi Avocado Toast all week! With a generous smear of avocado, a few rocket leaves and a little drizzle of honey, finished with a sprig or two of fresh dill, a the bright zing from a squirt of lime, this toast will have you dreaming about her too.
If you have never tried halloumi cheese, you are in for a treat! It’s quite firm, and when pan fried, it becomes crunchy and chewy. Some people find it salty, so be mindful that you don’t overpower your toast with too much salt. You can always add more later.
The perfect combination of sweet, salty and fresh! Enjoy your brunch!
Halloumi Avocado Toast
Ingredients:
2 slices of sourdough toast
1/2 avocado, spread on each slice of bread
1/2 cup loosely packed arugula leaves
1 pkg halloumi, sliced into 1/4” rounds
1 tbsp honey
dill for garnish
squeeze of lime (optional)
Directions:
Preheat a non-stick skillet or pan over medium heat. Add the slices of halloumi cheese and cook until you get a golden crust, 2-3 minutes per side.
Meanwhile, toast your sourdough. Then divide the avocado evenly over each piece of toast and spread to the edges.
Top with arugula, the halloumi cheese, a drizzle of honey, a few sprigs of dill and a squirt of lime juice.
