Easy Sheet Pan Caprese Gnocchi

Sheet Pan Gnocchi with tomatoes, mozzarella and basil is the perfect weeknight vegetarian dinner.

This simple sheet pan gnocchi dish is your new favourite meatless Monday dinner that is on the table in less than 20 minutes!

Regardless of the season, you can indulge in the flavours of summer with this Easy Caprese Gnocchi Sheet Pan dinner! Pillowy soft potato gnocchi, sweet roasted cherry tomatoes, bocconcini mozzarella cheese balls, and fresh basil come together for a vegetarian delight that's bursting with flavour. It's a deliciously easy meal that is made in 20 minutes and perfect for any night of the week!

This is an incredible dish to serve to vegetarians or as a lovely side dish at a gathering.

This Easy Caprese Gnocchi Sheet Pan Dinner is a testament to how simple ingredients can come together to create a delicious, satisfying meal with minimal effort. Easy Sheet Pan Gnocchi Caprese

Ingredients:

  • 1 lb fresh gnocchi

  • 2 cups cherry tomatoes

  • 3 tbsp olive oil

  • S&P

  • 1 cup bocconcini balls, halved, if large

  • 1/3 cup basil leaves, shredded

  • 2 tbsp balsamic glaze (or to taste)

Directions:

  1. Preheat the oven to 400F.

  2. Line a sheet pan with parchment paper. Dump the gnocchi onto the sheet pan with the cherry tomatoes. Drizzle the olive oil over top and season with S&P. Give everything a good stir.

  3. Pop this into the oven and bake for 10-15 minutes. Remove from the heat. Gently stir and add the bocconcini cheese to the pan. Let the heat of the sheet pan slightly melt the cheese. If you like, place the pan back into the oven for 2-3 minutes.

  4. Sprinkle the shredded basil over top of the Caprese, season with more flaky salt and a generous drizzle of balsamic glaze.
