Dump & Bake French Toast Breakfast Casserole
(make ahead)
Ingredients:
6-8 cups day-old bread, cut into cubes (use a country loaf instead of sliced bread)
1/4 cup butter, melted
1/2 cup packed brown sugar
2 tsp vanilla extract
6 large eggs
2 cups milk (any milk will work, I used 2%)
1 tsp cinnamon
1/2 tsp salt
Directions:
Start by preparing your baking dish by spraying it with non-stick spray. Add the cubed bread into the dish and set aside.
In a bowl, mix together the melted butter and the brown sugar. Then add in the eggs, milk, vanilla, cinnamon and salt. Stir well to combine.
Pour this mixture all over the bread cubes and press the bread into the egg mixture to ensure the bread is well coated. Cover this with foil and let this sit for 3 hours or overnight in the fridge.
When ready to cook, preheat the oven to 350F. Bake for 60 minutes until golden and the egg mixture looks set.
Serve this warm with lots of maple syrup.
This Dump & Bake, make-ahead French Toast Breakfast Casserole is sure to be a hit with Mom this Mother's Day.
