Crispy BBQ Chicken Tacos (the meal you make when you don’t feel like cooking)
When you absolutely can’t cook, this is the recipe you’ll turn to. You’ll swing by the grocery store on your way home and pick up a rotisserie chicken. Grab that bottle of BBQ sauce that has taken up residence at the back of your fridge and some cheddar cheese and get ready to be so super pleased with yourself for creating such a simple masterpiece of a meal!

You’ll start by removing the meat from the bones of the chicken. I have a video of it here. It is messy, but takes only 5 minutes! Definitely do this when the chicken is warm to save you effort and energy. REMEMBER! We are not throwing out the bones! Those go into a zip top bag in the freezer until it is full and then you will make the most nourishing chicken stock!

Next, you simply sauté the red onion, some delicious seasonings and that shredded chicken together with cilantro and stuff it into tortillas with some Cheddar cheese. Pop these into the airfryer until then are nice and golden and you have yourself the most satisfying dinner!
Crispy BBQ Chicken Tacos
Ingredients:
1/2 red onion, small diced. I love my little Amazon veg chopper
1/2 tsp smoked paprika
1/2 tsp garlic powder
1 rotisserie chicken, meat removed from the bones and shredded (do this when the bird is still warm….it’s sooooo much easier!). Also - save the bones for chicken stock!!!!!!!
1/4 cup BBQ sauce
1/2 a bunch of cilantro, finely chopped
8 oz shredded Cheddar cheese
6-8 soft flour tortillas
cooking spray
To Serve:
1 avocado, sliced
BBQ Sauce
1 lime
Directions:
In 1 tbsp of oil, sauté the red onion over medium heat. Season the onion with the smoked paprika, the garlic powder and a pinch of salt.
Add in the shredded chicken until it is heated through, then add the chopped cilantro.
Preheat your air fryer to 400F while you assemble the tortillas. To 1/2 of a large flour tortilla (you can sub gluten free) spread out about 1/4 cup of the chicken mixture. Top this with a generous handful of the shredded cheddar cheese. Fold the tortilla in half. Repeat until you’ve used all the chicken mixture.
OVEN INSTRUCTIONS: Preheat to 425F before you begin cooking. Line a baking sheet with parchment paper and place the folded, filled tortillas on the baking sheet.
Spray the outside of the tortilla with a quick hit of cooking spray. Air fry for 8 minutes (flip sides halfway through cooking) or bake in the oven for 10-12 minutes until they are crispy and golden.
Serve with extra BBQ sauce for dipping and sliced avocado (or make this guacamole!)
