Homemade Mac and Cheese Recipe
Sadly, the boxed version just does not compare to the homemade version of Mac and Cheese with creamy Gouda and sharpe Cheddar cheese. This recipe was born when I had a couple of giant storage containers of leftover cooked pasta in the fridge as well as some half eaten blocks of cheese.
I grabbed a few more pantry staples from my Perfect Pantry Checklist and whipped this delicious pot of creamy, comforting and oh-so-satisfying Homemade Mac and Cheese in just about 20 minutes.
Homemade Mac and Cheese Recipe
Ingredients:
12oz short pasta
2 tbsp butter
1/4 cup flour
3 cups 2% milk
1 cup gouda cheese
1 1/2 cups cheddar cheese
1 tsp ground mustard
1/2 tsp garlic powder
1/2 tsp salt
1 tsp Frank’s Red Hot sauce
freshly ground pepper to taste
Directions:
If your pasta isn’t already cooked, cook it in boiling, salted water until just al dente. you want it to keep a bit of its ‘bite’.
Start by making a roux….wait! Come back! I know it sounds like a confusing, fancy French word but it’s super easy. You melt 2 tbsp of butter in a large pot over medium-high heat. When it’s melted, add in the 1/4 cup of flour. Whisk or stir it until it looks all clumpy and crumbly. Phew! You almost missed out on the best Mac and Cheese!
Slowly pour in your milk, whisking to combine. You’ll continue to stir this for about 4 minutes until the sauce starts to thicken. Then add in your grated cheeses, stirring/whisking until it’s all combined.
Add in the seasonings - mustard powder, salt, and Frank’s hot sauce.
Finally stir in your cooked pasta until every noodle is coated in the creamy, cheese-y sauce.
Dig in and enjoy!
